Healthy Recipe for Liver and Mushrooms
Ingredients
- 2 lb beef liver
- 2 cans low fat cream of mushroom soup
- 4 c whole wheat crackers, crushed
- 2 egg whites
- 1 c 1% milk
- 2 t olive oil
- 2 large onions, sliced
- 1 t black pepper
Directions
Cut liver into 2 to 4 oz slices. Soak liver in cold water overnight in refrigerator. Rinse and drain liver until blood is removed. In a bowl whip eggs with milk. Heat olive oil in skillet on low medium. Spread crushed crackers on a cookie sheet. Dip liver one piece at a time and coat in egg mixture and then roll in crushed crackers. Spray breaded liver with cooking spray. Fry liver in heated pan until brown on both sides. In a separate sauce pan saute onions in olive oil. Add cream of mushroom soup. Place cooked liver in a glass baking dish and pour sauce and onion mixture over liver. Bake at 350 degrees for 30 minutes.
