Mexican Chicken Recipe

Ingredients

  • 2 chicken breasts
  • 2 c reduced-sodium, fat free chicken broth
  • 2 Tbsp olive oil
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 (14 oz) can diced tomatoes, drained
  • 1/4 c salsa
  • 1 tsp cumin
  • 1/4 tsp oregano
  • 1/4 tsp black pepper
  • 1 (14 oz) can drained black beans, drained & rinsed

Directions

Lightly coat a on-stick skillet with cooking spray. Brown chicken breasts in pan. Add chicken broth, cover and simmer until the chicken is very tender, 25-30 minutes. Drain chicken broth and cut chicken into bite size pieces. In a large saucepan, saute onion and garlic in olive oil for about 4 minutes. Add chicken, tomatoes, salsa, cumin, oregano, black pepper and black beans. Simmer for 10-15 minutes until thickened. Top with salsa, low fat cheese, low fat sour cream or avocado for added flavor! (reminder: addition of ingredients will change nutrient content.)
